Kupovala som si od kr\u00e1snej \u017eeny v slovenskom kroji ra\u017en\u00fd kv\u00e1skov\u00fd chlieb\u00a0(v\u00fdnimo\u010dnej chuti) a po chv\u00ed\u013eke rozhovoru mi prezradila jej pr\u00e1cu s kv\u00e1skom a kv\u00e1skov\u00fdm pe\u010den\u00edm a pon\u00fakla mi jej kv\u00e1sok, ktor\u00fd m\u00e1 su\u0161en\u00fd.<br \/>\nPote\u0161ila som sa, lebo m\u00f4j kv\u00e1sok nevydr\u017eal dlh\u00e9 skladovanie a tak som mala znovu d\u00f4vod vr\u00e1ti\u0165 sa ku kv\u00e1skov\u00e9mu pe\u010deniu &#8211; a to s ve\u013ekou rados\u0165ou.<br \/>\nAko prv\u00e9 som upiekla b\u00e1bovku, ktor\u00e1 bola ve\u013emi chutn\u00e1, ale pre m\u0148a trochu tuh\u00e1 a tak ju tu zatia\u013e nen\u00e1jdete na mojej str\u00e1nke, ale jej \u010das pr\u00edde a nesk\u00f4r v\u00e1m ur\u010dite prid\u00e1m na \u0148u recept.<br \/>\n<img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-895\" src=\"http:\/\/www.jarkapecie.sk\/wp-content\/uploads\/2017\/01\/KvaskoveBuchty-3.jpg\" alt=\"\" width=\"1200\" height=\"800\" srcset=\"https:\/\/www.jarkapecie.sk\/wp-content\/uploads\/2017\/01\/KvaskoveBuchty-3.jpg 1200w, https:\/\/www.jarkapecie.sk\/wp-content\/uploads\/2017\/01\/KvaskoveBuchty-3-595x397.jpg 595w, https:\/\/www.jarkapecie.sk\/wp-content\/uploads\/2017\/01\/KvaskoveBuchty-3-768x512.jpg 768w, https:\/\/www.jarkapecie.sk\/wp-content\/uploads\/2017\/01\/KvaskoveBuchty-3-960x640.jpg 960w, https:\/\/www.jarkapecie.sk\/wp-content\/uploads\/2017\/01\/KvaskoveBuchty-3-150x100.jpg 150w, https:\/\/www.jarkapecie.sk\/wp-content\/uploads\/2017\/01\/KvaskoveBuchty-3-600x400.jpg 600w\" sizes=\"auto, (max-width: 1200px) 100vw, 1200px\" \/>Z nakvasen\u00e9ho su\u0161en\u00e9ho ra\u017en\u00e9ho kv\u00e1sku mi vznikol siln\u00fd kv\u00e1sok a tak pri\u0161li na rad babkine kysnut\u00e9 buchty.<br \/>\nVe\u013ea \u013eud\u00ed nem\u00e1 trpezlivos\u0165, alebo nevie pracova\u0165 s klasick\u00fdm kysnut\u00fdm cestom, a tak je to aj s kv\u00e1skov\u00fdm cestom. Chce to ve\u013ea trpezlivosti a praxe a l\u00e1sky. V\u00fdsledok v\u017edy stoj\u00ed za to.<br \/>\nV dne\u0161nej dobe sa viete \u013eahko dosta\u0165 k ve\u013ek\u00e9mu mno\u017estvu receptov, ale v\u017edy je treba\u00a0vyu\u017ei\u0165 svoje sk\u00fasenosti a sledova\u0165 kv\u00e1sok a cesto. Pri tomto recepte som vyu\u017eila svoje sk\u00fasenosti z kysnut\u00fdm cestom, ako aj sk\u00fasenos\u0165 z kurzu\u00a0u <a href=\"http:\/\/www.zdravepecenie.sk\/\" target=\"_blank\" rel=\"noopener noreferrer\">Lenky Man\u010d\u00edkovej<\/a>\u00a0(<a href=\"http:\/\/www.zdravepecenie.sk\/\" target=\"_blank\" rel=\"noopener noreferrer\">http:\/\/www.zdravepecenie.sk\/ <\/a>) a pre\u010d\u00edtala som nespo\u010det r\u00e1d a receptov na webe. A na z\u00e1ver som sa riadila pr\u00edpravou tak, ako som to videla doma.<\/p>\n<p><em><strong>Pr\u00edprava rozkvasu:<\/strong><\/em><br \/>\nOdoberte do vy\u0161\u0161ej n\u00e1doby dve polievkov\u00e9 ly\u017eice kv\u00e1sku a pridajte 110 g \u0161paldovej m\u00faky a 150 ml vla\u017enej vody a v\u0161etko premie\u0161ajte. Urobte tak ve\u010der a nechajte\u00a0na kuchynskej linke cez noc.<br \/>\nN\u00e1dobu prikryte igelitov\u00fdm vreckom. R\u00e1no m\u00f4\u017eete zamiesi\u0165 cesto, ktor\u00e9 nech\u00e1te potom 2- 3 hodiny kysn\u00fa\u0165. Ve\u013emi z\u00e1le\u017e\u00ed na teplote\u00a0v miestnosti.<\/p>\n<p><em><strong>Na pr\u00edpravu cesta budete teda potrebova\u0165:<\/strong><\/em><\/p>\n<ul>\n<li>250 g rozkvasu (ten ste si pripravili pod\u013ea n\u00e1vodu vy\u0161\u0161ie)<\/li>\n<li>130 &#8211; 150 ml vla\u017enej vody (polovicu m\u00f4\u017eete nahradi\u0165 acidkom)<\/li>\n<li>1 cel\u00e9 vajce a 1 \u017e\u013atok<\/li>\n<li>40 g rozpusten\u00e9ho masla<\/li>\n<li>50 g trstinov\u00e9ho cukru<\/li>\n<li>1\/2 \u010dl soli<\/li>\n<li>1 \u010dl vanilkov\u00e9ho extraktu<\/li>\n<li>350 g hladkej \u0161paldovej m\u00faky<\/li>\n<li>k\u00f4ru z jedn\u00e9ho bio citr\u00f3na<\/li>\n<li>maslo (olej) na vymastenie plechu<\/li>\n<\/ul>\n<p><em><strong>Plnka:<\/strong><\/em><br \/>\n200 g mlet\u00e9ho maku a 50 g trstinov\u00e9ho cukru uvarte kr\u00e1tko s 50 ml vody. Pridajte pod\u013ea chuti hust\u00fd slivkov\u00fd lekv\u00e1r (najlep\u0161\u00ed bez cukru).<\/p>\n<p><em><strong>Pr\u00edprava:<\/strong><\/em><br \/>\nZmie\u0161ajte si preosiatu m\u00faku, so\u013e, cukor v jednej mise. Do v\u00e4\u010d\u0161ej misy dajte rozkvas, roz\u0161\u013eahan\u00e9 vajce a \u017e\u013atok, rozpusten\u00e9 maslo a \u010das\u0165 vody. V\u0161etky tekut\u00e9 zlo\u017eky dobre\u00a0premie\u0161ajte, pridajte vanilkov\u00fd extrakt a str\u00fahan\u00fa citr\u00f3nov\u00fa k\u00f4ru a e\u0161te premie\u0161ajte.<br \/>\nPostupne prid\u00e1vajte such\u00fa zlo\u017eku a ka\u017ed\u00fa \u010das\u0165 dobre zapracujte.<br \/>\nCel\u00e9 cesto m\u00f4\u017eete vymie\u0161a\u0165 v robote, alebo klasicky s varechou, alebo rukou (tak to rob\u00edm najrad\u0161ej).<br \/>\nDobre vypracovan\u00e9 cesto prikryte f\u00f3liou a nechajte ho\u00a02 &#8211; 3 hodiny kysn\u00fa\u0165 na teplej\u0161om mieste. Cesto zdvojn\u00e1sob\u00ed svoj objem.<br \/>\nPo vykysnut\u00ed prelo\u017ete cesto na pracovn\u00fa dosku (alebo silik\u00f3nov\u00fa podlo\u017eku).<br \/>\nZ cestom sa dobre pracuje, tak\u017ee sta\u010d\u00ed podlo\u017eku trochu potrie\u0165 olejom, ale m\u00f4\u017eete pokra\u010dova\u0165\u00a0aj tak, \u017ee si cesto podsypete trochou m\u00faky.<br \/>\nLy\u017eicou si odkrajujte \u00a0mal\u00e9 k\u00fasky cesta (cca. 40-50 g), tie rukami roz\u0165ahujte \u00a0do kruhu a do stredu dajte plnku.<br \/>\nPlnku zaba\u013ete do cesta a upravte do tvaru buchti\u010dky. Takto spracujte cel\u00fa d\u00e1vku cesta a plnky.<br \/>\nPek\u00e1\u010d (n\u00e1dobu) na pe\u010denie si dobre potrite maslom, alebo olejom \u00a0(m\u00f4\u017ee by\u0165 aj ghee ).<br \/>\nOdpor\u00fa\u010dam da\u0165 si na pek\u00e1\u010d viac rozpusten\u00e9ho masla (oleja) a ka\u017ed\u00fa buchti\u010dku\u00a0namo\u010di\u0165 do tuku a pritla\u010di\u0165 k druhej. Takto zapl\u0148te cel\u00fd pek\u00e1\u010d.<br \/>\nBuchty pe\u010dte pri teplote 180\u00b0C cca. 35-40 min\u00fat.
